Mustard rubbed pork loin

Mix 2 to 3 tablespoons of Dijon mustard with a tablespoon of crushed rosemary and thyme.
Rub all over the roast, placed in a Ziploc bag overnight or for at least two hours.
Take the roast out for a half an hour before cooking, roast on 300° for required temperature per pound.
Let rest for 30 minutes
Return to the oven with temperature at 450° for 10 minutes to brown, cut and serve.
