Slow cooker African stew recipe or African crock pot stew recipe with hearty chunks of beef cooked until fork tender. Dried fruit, vegetables, chick peas and spices help to complete this wonderfully tender African vegetable stew recipe.

Avoid buying stew meat that is already cut from the meat counter, unless it is on sale and the butcher can tell you what cut of beef the stew has been cut from. Packaged beef stew is usually more expensive than buying and cutting your own roast. Beef stew cut from the chuck makes the best stew recipes, buy a blade roast or cross rib (shoulder arm roast) and cut it yourself into 1 inch cubes is best for a great beef stew crock pot recipe.

Sirloin tip roast, bottom round (outside round roast) or top round (inside round roast) can also be used if you want a leaner cut of beef, although they are all a bit on the dry side compared to a cut from the shoulder.

Ingredients

  • 3-4 pound boneless chuck (blade) cut into 1 inch cubes
  • 2 tablespoons olive oil
  • 4 carrots, chopped
  • 2 medium onions, chopped
  • 2 garlic cloves minced or 1 teaspoon jarred minced garlic
  • 2 teaspoons sweet paprika
  • 2 cups beef broth
  • 1 cup chicken broth
  • 1 teaspoon ground cumin
  • 1\2 teaspoon ground cinnamon
  • 1 cup dried apricots, cut into pieces
  • 1 can chick peas, drained and rinsed
  • 1\2 cup golden raisins (optional)
  • 1\2 cup all purpose flour
  • 1-2 teaspoon salt
  • 1 teaspoon pepper

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef and brown on all sides, about 6-8 minutes, for larger portions you may have to brown stew in 2 batches. Transfer the beef to the slow cooker insert.
  2. Add another tablespoon of olive oil to the same skillet over medium-high heat.  Add onions and garlic and cook until onions are softened, about 5-6 minutes. Add carrots, cumin, sweet paprika and cinnamon and saute about 1-2 minutes more.
  3. Stir and flour and cook 1 minute and then stir in 1 cup of chicken broth to the skillet and scrape up and brown bits from the bottom of the skillet. Transfer all from the skillet to the slow cooker insert.
  4. Add the beef broth, apricots, raisins and chick peas to the slow cooker and stir.
  5. Cover the slow cooker and cook on low 9-11 hours or 5-6 hours on high. Season with salt and pepper to taste and serve.

Slow Cooker Tips

  • For large roast or families of more than 4 we recommend a large oval slow cooker of 6 quarts of more.
  • Never fill the slow cooker more than 2/3 full, meat produces moisture and can cause the liquid to rise over or near the top.
  • Given the choice cook on low setting, food cooked on low are more tender and moist after the longer cooking time.
  • Brown and sear meat on all sides before adding to the slow cooker, this will help to seal in the juices for maximum tenderness.
  • Keep the lid on, slow cookers can lose up to 30 minutes of cooking time with the lid off.
  • Defrost food before adding to slow cooker.
  • Ingredients cut to the same size will cook more evenly.
  • Use dried spices and herbs for long, slow simmers, add fresh herbs near the end of cooking.
  • Dense foods take longer to cook, place denser food at the bottom where the temperature is a little hotter.
