A thermometer probe is inserted into the center of a roast through a small opening in the lid, you then have the ability to select a temperature to set the roast at, once the internal temperature is reached, the slow cooker will switch to warm mode, preventing the roast from overcooking. For large roast or cooking for a gang we recommend at least a large oval 6 quarts slow cooker.
